Taco Soup

 

This hearty taco soup combines the rich flavors of black beans, corn, diced tomatoes, onion, and ground beef. It's an easy and delicious meal perfect for any occasion. this recipe makes a double batch because we like to freeze it in one cup bowls for quick lunches and dinners. Here's how to make it:

Ingredients

  • 2 pounds ground beef

  • 2 cups dried black beans, rinsed and drained

  • 2 cans (15 ounces) diced tomatoes with green chilies

  • 2 cups corn kernels, fresh or frozen

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 2 Tsp chili powder

  • 2 tsp paprika

  • 2 Tsp cumin

  • 2 Tsp garlic powder (adjust to taste)

  • 4 Tsp onion powder

  • 1 Tsp salt and pepper

  • 1 Tsp cayenne pepper (this is optional if you like your food a little more heat)

  • 6 cups beef broth

  • Salt and pepper, to taste

  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños, tortilla chips

Instructions

  1. Prepare the Black Beans

    • Rinse and clean the black beans. lace your beans in a pot and cover with water or broth by about two inches.

    • Turn the heat to low and cover, stirring the beans occasionally. Don't let it reach a boil.

    • Cook soaked beans for about 45 to 60 minutes and unsoaked for about 50 to 65 minutes.

    • We check our beans by tasting them. You can also check the beans for doneness by mashing them against the side of the pot.

  2. Cooking the Soup

    • In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain any excess fat.

    • Add the diced onion with the ground beef. Cook until the onion is translucent, about 3-4 minutes.

    • Stir in the garlic, black beans, diced tomatoes, corn, seasonings, and beef broth. Mix well to combine.

    • Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 10 minutes or until the beans and vegetables reach your desired level of doneness.

  3. Season and Serve

    • Taste and adjust the seasoning with salt and pepper as needed. Serve hot with your choice of toppings such as sour cream or cheddar cheese.
