Scallops with White Wine

 

Scallops are a delicious and elegant seafood dish, perfect for a special occasion or a delightful weeknight dinner. Combining them with a white wine and clarified butter sauce enhances their natural sweetness and adds a touch of sophistication to your meal. We served ours over a bed of gluten free pasta and a piece of garlic bread.

 

We didn’t have any ghee or clarified butter at the house, so we made our own. This is a pretty easy process, and I have included a link below on how to clarify your own butter.

How to clarify your own butter

Ingredients

  • 1 pound of sea scallops
  • 3 ounces uncooked pasta
  • 1 tablespoon of olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 cup of white wine
  • 2 tablespoons of clarified butter
  • 2 cloves of garlic, minced
  • Juice from ½ fresh lemon or 2 tablespoons of lemon juice
  • 1/2 tablespoon parsley
  • 1/2 tablespoon basil
  • 1/2 tablespoon oregano

 

Instructions

 

Start your pasta or rice:

You will want to start cooking your pasta a few minutes before you the scallops, since they cook really fast.

 

Prepare the Scallops:

Pat the scallops dry with a paper towel. Season them with salt and freshly ground black pepper.

 

Sear the Scallops:

Heat the olive oil in a large skillet over medium-high heat. Add the scallops to the skillet in a single layer. Sear for about 2-3 minutes on each side until they are golden brown and opaque in the center. Remove the scallops from the skillet and set them aside.

 

Make the Sauce:

In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the white wine and bring to a simmer. Let it reduce by half, about 3-4 minutes. Stir in the clarified butter and lemon juice, whisking until the butter is melted and the sauce is smooth.

 

Combine and Serve:

Return the scallops to the skillet, gently tossing them in the sauce to coat. Sprinkle with fresh parsley and serve immediately. We served ours over a bed of pasta and a piece of garlic bread with cheese.
