  • 6-8 pounds pork shoulder roast
  • ½ small red onion, sliced
  • 8 ounces of mushrooms, sliced (we prefer baby Bella mushrooms)
  • 10 ounces of cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon oregano
  • 1 tablespoon marjoram
  • 1 cup chicken broth
  • 1/4 cup chopped fresh parsley

 

 

Instructions:

  1. Prepare the Pork: Pat the pork shoulder roast dry with paper towels. This helps the seasoning adhere better and promotes a nice crust.
  2. Season the Pork: In a small bowl, combine the minced garlic, Italian seasoning, sea salt, black pepper, and red pepper flakes. Rub this mixture all over the pork roast.
