Balsamic Bruschetta

Balsamic Bruschetta Recipe

Bruschetta is a classic Italian appetizer, perfect for any gathering or a simple dinner at home. This version is very simple to make and really incorporates the traditional flavors. Here's a step-by-step guide to making delicious balsamic bruschetta.

Ingredients

  • 1 loaf of French bread/baguette, sliced into 1/4-inch-thick slices
  • 2 teaspoons olive oil
  • 8 Roma tomatoes, diced (we used 2 10.5-ounce cans of petite diced tomatoes well drained)
  • 2 cloves garlic, minced
  • 1/3 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon pepper
  • 1/4 cup grated Parmesan cheese

Note: we used diced canned tomatoes for our bruschetta. We used cheese cloth when draining the liquid from the tomatoes. This helped us to strain out most of the juice.

Instructions

Making the Bruschetta

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the baguette slices on a baking sheet. Brush each slice with olive oil.
  3. Place the baking sheet in the oven and toast bread until golden brown, about 5-7 minutes, turning halfway through. Remove from the oven and set aside.
  4. In a medium-sized bowl, combine the diced tomatoes, minced garlic, and chopped basil. Add the balsamic vinegar, salt, and pepper, stirring gently to combine.
  5. Spoon the tomato mixture evenly onto each toasted baguette slice.
  6. Sprinkle with Parmesan cheese if desired.

Serving

  • Arrange the bruschetta on a serving platter and garnish with additional basil leaves for a pop of color and freshness.
  • We left the bruschetta in the bowl and arranged the bread around it on a charcuterie board.

Enjoy your homemade balsamic bruschetta as a delightful starter or paired with a fresh salad for a light meal!
