Easy Slow Cooker Chicken Creole
This easy Slow Cooker Chicken Creole is packed with chicken, tomatoes, peppers, vegetables and plenty of Creole flavor. It's an easy, budget-friendly dinner that does most of the work right in the slow cooker.
We use rotisserie chicken to make this recipe even easier. It saves prep time, gives us plenty of tender chicken for the meal, and the leftover carcass can be saved to make homemade chicken stock. That's one chicken working overtime in our kitchen!

Ingredients

3–4 cups shredded rotisserie chicken

1 (14.5-ounce) can stewed tomatoes, with liquid

1 stalk celery, diced

1 green bell pepper, diced

1 red bell pepper, diced, optional

1 yellow bell pepper, diced, optional

4 cloves garlic, minced
-
1 onion, diced

1 (4-ounce) can mushrooms, drained

1 fresh jalapeño, seeded and chopped

Homemade Creole seasoning, to taste

Salt and pepper, to taste

Basmati rice, for serving, optional

Homemade chicken stock, if additional liquid is needed
Directions

Add the tomatoes, celery, bell peppers, garlic, onion, mushrooms and jalapeño to the slow cooker.

Season with Creole seasoning, salt and pepper and stir everything together.

Cover and cook on LOW for approximately 4–5 hours, or until the vegetables are tender.

Stir in 3–4 cups of shredded rotisserie chicken during the final 30–60 minutes of cooking.

Taste and adjust the Creole seasoning, salt and pepper as needed.

Serve hot over basmati rice, with cornbread, or enjoy it on its own.
